The microclimate of this mountains is characterised by not very cold and wet winters, not very hot summers, and long and mild springs and autumns. The unique conditions of the area make that hams develop slowly for long and quiet periods of curing in natural warehouses during which hams acquire intense and rich aromas as well as exquisite tastes. As a result of this, the Iberian hams and shoulders cured in this exceptional and famous andalusian highlands are considered as an authentic treasure of the universal gastronomy.
